Umami Seasoned Mushroom-Quinoa Burger

This mushroom quinoa burger is lean, clean, and super healthy--but it doesn't taste that way thanks to the addition of our Umami Dust seasoning, which brings out the burger's meaty, mushroomy flavors. Top with avocado, tomato, or your favorite seasonings.

Ingredients

  • 2 cups chopped Portabella or Cremini mushrooms

  • 1/3 cup Chopped walnuts

  • 1 clove Garlic, chopped

  • 2 Tbsp Vegetable oil

  • 3 Tbsp Chopped red onion

  • 2 each Chopped green onion

  • 2 tsp Rice wine vinegar

  • 1 cup Cooked quinoa

  • 3 Tbsp Rice flour

  • 3 Tbsp Umami Dust seasoning

  • 1 tsp Kosher salt

  • 4 each Small burger buns or rolls, sliced in half

  • 4 each Fresh tomato slices

Directions

  1. Pre heat oven to 350F.

  2. Toss the chopped mushrooms, walnuts, and garlic with 1 TBSP vegetable oil. Roast for 15 minutes in the preheated oven. Remove and let cool to room temp. Once cooled, place in the bowl of a food processor with the red onion, green onion and rice wine vinegar. Puree until a medium ground mix is achieved. Remove to a medium mixing bowl, add the cooked quinoa, umami dust seasoning, and kosher salt. Stir in the rice flour, and mix well.

  3. Refrigerate for at least 2 hours. Form into 4 patties after 2 hours.

  4. Heat the remaining 1 TBSP vegetable oil in a medium skillet.  Brown the patties on both sides, finishing in oven for 5 minutes. Serve atop the burger buns with a slice of fresh tomato, and your favorite condiments.
