Umami Pub Burger with Umami Aioli
Umami has been called the fifth taste on our tongues. Umami describes savory, rich flavors that usually are fatty or meaty. Our Umami Sauce Starter is all of those things and this easy burger explodes with flavors of Mushroom, Garlic and Sun-Dried Tomato.

2 Pounds Ground Sirloin
1/2 Cup Mayonnaise
4 Tablespoons Umami Sauce Starter
4 Burger Buns
8 Slices Of Cheddar Cheese
Bread And Butter Pickles
Add the ground beef and 3 1/2 tablespoons of Umami Sauce Starter to a large bowl. Mix briefly but thoroughly to combine the starter. Convert this mixture into four 8 ounce patties a slightly larger diameter than the buns and place them on a sheet pan. Cover this with plastic wrap and refrigerate for 10 minutes.
In a small bowl whisk the remaining starter into the mayonnaise until smooth. Cover and set aside.
Place a large skillet over medium high heat until water drops sizzle and dance off the surface. Add the burgers to the pan and turn the heat to high. Cook 3-4 minutes for medium rare and flip, turn the heat down to medium high. After one minute add 2 slices of cheese to each burger and cook for 2-4 minutes more. Remove the burgers to a wire rack to rest.
Toast the bun halves in the burger grease and transfer to serving plates. Spread a generous portion of Umami Aioli to the bottom of each bun, top with a burger and a few pickles..
