Green Curry Chicken

Ingredients

  • 1 1/2 Tablespoons Vegetable Oil 

  • 8 Ounces Chicken Breast, cut into small pieces 

  • 2 Tablespoons Thai Coconut Green Curry Powder

  • 1 Cup Chicken Broth 

  • 1 Small Green Pepper, stemmed, seeded, and sliced 

  • 2 Small Red Chile, cut into thick strips 

  • 1 Tablespoon Fish Sauce 

  • 1 Tablespoon Palm Sugar, Or Brown Sugar 

  • 6 Basil Leaves, torn

Directions

  1. Heat oil in medium saucepan over medium high heat. Add chicken and cook until browned on bottom, about 3 minutes. Add curry powder and stir well. Continue cooking for 1 minute. 

  2. Add broth, green pepper, red pepper, fish sauce, palm sugar and basil. Allow broth to come to a simmer, reduce heat to maintain steady simmer, and cook for 4 to 5 minutes.

  3. Serve with white rice.
