Thai Coconut Green Curry with Tofu
This is our Thai Coconut Green Curry Starter. Bring the vegetables or protein and we provide the flavor and means to create a rich, authentic Thai green curry sauce. The remarkable formulation has coconut milk, chiles and spices and makes dinner in minutes.

2 Ounces Firm Tofu, cubed
2 Ounces Peeled Sweet Potato, cubed and cooked
1 Ounce Broccoli Florets
1 Ounce Thinly Sliced Carrots
1 Ounce Thinly Sliced Jalapeño Pepper
1 Ounce Chopped Spinach
1 Tablespoon Neutral Cooking Oil
1 Cup Water Or Vegetable Broth
1/3 Cup Thai Coconut Green Curry Starter
Cooked Jasmine Rice
Place a medium non-stick skillet over medium-high heat and add the oil. When the oil begins to shimmer add the vegetables, cook for 1 minute then add the tofu. Toss this once or twice cooking for 1-2 minutes.
In a small bowl combine the liquid with the curry starter, whisking smooth.
Pour this mixture over the vegetables and simmer until a slightly thick sauce is formed and the vegetables are lightly coated.
Remove from the heat and serve with rice. Garnish with cilantro, basil, hot chile flakes and limes.
