South African Chakalaka
Prep time: 10 min | Cook time: 80 min | Serves: 6-8
¼ cup neutral cooking oil
1 medium red onion, diced
2 cloves of garlic, minced
2 Roma tomatoes, cored, seeded and diced
1 small head of red cabbage, sliced
1 green bell pepper, chopped
1 red bell pepper, chopped
1 cup dried cranberry beans
4 tablespoons South African Chakalaka Spice
½ cup water
Salt and Pepper to taste
Sort and rinse the dried cranberry beans. Add to a large pot of water. Bring to a boil and simmer until tender, skimming off foam as it develops. Strain the beans and set aside.
In the same pot place the oil, onion and garlic. Sweat this over a low heat for 5 minutes and add the tomatoes, cabbage, peppers, South African Chakalaka Spice and beans. Add ½ cup of water. Cook this on low covered for 10-15 minutes. Season to taste with salt and pepper.
