roasted Sweet Potatoes with Berbere
Berbere, a hot, fragrant spice blend native to Ethiopia, makes a unique, flavorful topping for sweet, creamy roasted sweet potatoes.

2 pounds sweet potatoes
3 tablespoons olive oil
2 tablespoons Berbere Spice
2 teaspoons sea salt
Wash potatoes, scrubbing the skin. Cut the potatoes lengthwise in half and then cut those halves into quarters.
In a bowl toss the wedges with oil and Berbere Spice.
Lay the wedges onto a baking pan lined with aluminum foil and place in an oven pre-heated to 425 degrees F. Roast for 15- 20 minutes and turn the wedges over for even browning. When the potatoes are fork tender remove to a serving dish and sprinkle with sea salt.
