Quick Romesco Pasta Sauce

1/2 Cup Romesco Sauce Starter
1/2 Cup Warm Water
1/2 Cup Olive Oil
1 Pound Pappardelle, Tagliatelle Or Fettuccine
1 Pound Large Shrimp (16/20 Per Pound), peeled, veined and rinsed in cold water
Fresh Goat Cheese, for garnish
Fresh Oregano Leaves, for garnish
Stir together ½ cup Romesco Sauce Starter with ½ cup warm water and let stand for 5 minutes to “bloom” the dry ingredients. Add ½ cup olive oil to the sauce starter paste and blend in a mini food processor or with a hand held stick blender until smooth.
Add pasta to a large pot of boiling water lightly seasoned with salt and a dash of neutral cooking oil.
While pasta cooks place a large skillet over medium heat and add the prepared Romesco Sauce Starter. Add the shrimp and simmer for 3-5 minutes.
When the pasta is Al dente strain and add directly to the sauce pan. Gently stir the sauce into the pasta until coated and serve.
Garnish with drops of goat cheese and fresh oregano leaves.
