Piri Piri Sausage in a Blanket
Put a delicious Portuguese twist on traditional pigs in a blanket with our Portuguese Piri Piri Blend! Serve with queso cheese dip for the perfect game day appetizer.

1 lb. Ground Pork Sausage
1/4 cup Portuguese Piri Piri Blend
1 sheet Puff Pastry Dough
1 Whole Egg (separated)
Mix ground pork sausage meat with the Piri Piri spice blend very well.
Lay one sheet of puff pastry dough on clean work surface, brush with egg white. Cut this in half lengthwise.
Pipe or form the pork sausage mix in a ¾ inch tube along the bottom part of the puff pastry.
Roll it up, overlapping the pastry dough once rolled.Repeat with the remaining sausage mix and second piece of puff dough.
Place on a parchment lined baking sheet, seam side down, and brush with the whole yolk. Place in freezer for one hour.
When partially frozen, pull from freezer, and cut the log into 1 inch sections. Replace on the parchment lined baking sheet, with at least an inch between each piece. Bake in a 400F oven for 10 to 12 minutes. Sausage should be completely cooked, and pastry nicely puffed and golden brown.
Serve hot with Mustard or favorite dipping sauce.
