Mashed Potatoes with Harissa


Vegan mashed potatoes are creamy, decadent and flavorful thanks to a mix of smashed red and yellow potatoes, cashew milk, olive oil, and Harissa.

  • 3 pounds small red and yellow potatoes

  • 1/2 cup cashew milk

  • 2-3 tablespoons good olive oil

  • 1 tablespoon Harissa Spice Blend

  • 2 teaspoons coarse sea salt


  1. Wash potatoes in cold water and add to a pot of cold water to cover.

  2. Boil potatoes until tender enough to mash with a finger. Drain and transfer to bowl.

  3. Mash the potatoes with a fork and add the cashew cream, 2 tablespoons of olive oil, salt and Harissa.

  4. Stir to combine and mash more if desired.

  5. Serve sprinkled with more oil, coarse sea salt and Harissa.
