Vadouvan is a French interpretation of Indian masala, combining classic curry spices of mustard seeds, fenugreek, cumin, coriander, cardamom and spicy chiles with savory garlic, onion, and shallot. This style of curry powder originated in the southern Indian region of Puducherry, which was intermittently governed as a French colony from the late 17th century until the region gained its independence in 1954.

Vadouvan is one of the most delicately flavored curry blends, but it does have a spicy kick of heat. Its bold but elegant flavor can stand up to powerful flavors like lamb, goat or yogurt, but it is also subtle enough to enhance chicken or delicate vegetables. The longer it cooks, the more its rich, roasted qualities come through.
