Pho (pronounced “fuh”) is a Vietnamese soup made with broth, herbs and spices, noodles and meat. Traditionally made with beef or chicken broth, pho probably originated in Northern Vietnam during the 20th century and has gone on to achieve popularity worldwide.

Traditionally, pho is prepared by simmering beef or chicken bones with charred onion, ginger, spices, and water or broth for hours in order to extract marrow. Although spice combinations differ greatly from region to region and even between families, seasonings commonly include some combination of cinnamon, star anise, black cardamom, coriander, fennel, and cloves. Rice noodles are usually added to the broth in addition to thin slices of meat. As is common with Vietnamese dishes, a variety of garnishes is added to the dish before serving.
