Garam Masala Apple Bread pudding

6 cups cubed stale bread, crusts remove
2 green apples, cored, peeled and sliced thin
2 cups granulated sugar
2 cups heavy cream
6 whole eggs
2 tablespoons Garam Masala
1 teaspoon coarse sea salt
2 tablespoons unsalted butter
Whisk the eggs and Garam Masala into the cream in a large bowl with 1 cup of sugar. Add the bread to the custard and set aside to soak.
Place a large skillet over medium high heat with 1 tablespoon of butter. Add sliced apples and cook for 2 minutes.
Add the other cup of sugar and cook until a light caramel forms, set aside.
Use the remaining tablespoon of butter to grease a baking dish. Place 1/3 of the bread mixture on the bottom of the dish, followed by 1/3 of the apples. Repeat this ending with the apples on top.
Place the dish in the oven and bake for 35-45 minutes until the center is 155 degrees F.
Allow the bread pudding to rest for 10 minutes before cutting.
