Flatbread with Chipotle Barbecue Spiced Chickpeas

Roasted Chipotle Barbeque chickpeas add smoky, tangy flavor and great texture to these healthy and delicious flatbreads topped with avocado, cauliflower, yogurt, and cilantro.

Ingredients

  • 1 cup cooked chickpeas

  • 2 Tbsp Vegetable oil

  • 1 1/2 Tbsp Chipotle Bbq Seasoning

  • 1 tsp Kosher salt

  • 1 each Avocado, ripe

  • 1 cup Cooked cauliflower florets

  • 1/3 cup Yogurt

  • 2 tsp Lime juice

  • 1 Tbsp Chopped cilantro

  • 2 Tbsp Finely slivered radish

  • 2 each Small flatbreads or pocket less pita breads

Directions

  1. Preheat oven to 425F

  2. Roll the cooked chickpeas between two cloth towels to remove the skins. Toss them with the vegetable oil, kosher salt, and one tablespoon of the Chipotle Bbq Seasoning. Roast for about 20 to 30 minutes on a baking sheet in the hot oven, stirring every few minutes. Let cool to room temperature.

  3. In a small bowl, mix the yogurt, chopped cilantro, and lime juice. In another small bowl, mash the ripe avocado.

  4. Spread the mashed avocado on the two flatbreads. Scatter the cooked cauliflower florets over this. Drizzle the cilantro/yogurt mix over next. Scatter the slivered radishes over this, and liberally garnish with the spiced chickpeas. Sprinkle the remaining ½ tsp chipotle barbeque seasoning liberally over everything. Serve with fresh lemon wedges.
