Vegetarian Curry Chili

1 cup dried garbanzo beans, cooked
1 cup light kidney beans, cooked
½ cup petite golden lentils, cooked
½ cup red chief lentils, coked
1 large sweet potato, peeled and chopped
1 large yellow onion, chopped
1 large red onion, chopped
2 large red peppers, seeded and chopped
2 small parsnips, peeled and chopped
1 large zucchini, seeded and chopped
1 medium carrot, peeled and chopped
10 garlic cloves, minced
2 tablespoons tomato paste
1 11.5 ounce can roast, diced tomatoes
1.5 quarts vegetable stock
Add all the ingredients to a large pot and set heat to low. Stir to combine and cover. When the liquid comes to a simmer stir again and add 2 tablespoons of salt.
Remove the cover and simmer to a low boil to cook for 20 minutes.
Check seasoning before serving
