Vegetarian Curry Chili

  • 1 cup dried garbanzo beans, cooked 

  • 1 cup light kidney beans, cooked 

  • ½ cup petite golden lentils, cooked 

  • ½ cup red chief lentils, coked 

  • 1 large sweet potato, peeled and chopped 

  • 1 large yellow onion, chopped 

  • 1 large red onion, chopped 

  • 2 large red peppers, seeded and chopped 

  • 2 small parsnips, peeled and chopped 

  • 1 large zucchini, seeded and chopped 

  • 1 medium carrot, peeled and chopped 

  • 10 garlic cloves, minced 

  • 2 tablespoons tomato paste 

  • 1 11.5 ounce can roast, diced tomatoes 

  • ½ cup Vadouvan French Masala Curry Powder 

  • 1.5 quarts vegetable stock 


  1. Add all the ingredients to a large pot and set heat to low. Stir to combine and cover. When the liquid comes to a simmer stir again and add 2 tablespoons of salt.

  2. Remove the cover and simmer to a low boil to cook for 20 minutes. 

  3. Check seasoning before serving
