Organic Cuban Mojo Rice & Bean Burrito


Our Organic Cuban Mojo Rice & Beans is a delicious medley of rice, quinoa, millet, black beans, and savory-sweet seasonings like garlic, orange, and chile peppers.   • 1 cup Organic Cuban Mojo Rice & Beans 

  • 2 cups water or stock 

  • 1 tablespoon olive oil 

  • 4 large flour tortillas 

  • 1 tomato, chopped 

  • ½ romaine lettuce heart, sliced thinly 

  • 1 avocado, sliced into wedges 

  • ½ cup shredded cheddar cheese 

  • ¼ cup sour cream 


  1. Combine 1 cup Organic Cuban Mojo Rice & Beans with 2 cups stock or water and 1 tablespoon of olive oil in 2-quart pot. Bring to a boil over high heat. Cover reduce heat to low, and simmer for about 20 minutes. Remove from heat and let stand 5 minutes, covered, then fluff and set aside in a warm spot on the stove top.

  2. Wilt the tortillas over an open flame on the stove. Do quarter turns on both sides being careful not to burn the tortilla (a little golden charring is delicious though!).

  3. Keep the tortillas warm and soft under a damp cloth or paper towel. 

  4. To prepare the burritos lay out one tortilla and scoop about a half a cup of Organic Cuban Mojo Rice & Beans into the center spreading to the left and right evenly. Leave 1” from the edge of the tortilla for easier folding

  5. Spread a little sour cream next to this either above or below in a line the length of the rice and sprinkle a little cheese over the rice. Then distribute a quarter of the lettuce, tomato and avocado slices across the rice. 

  6. Assemble by folding in the sides of the tortilla on the left and right of the rice. Grab the tortilla edge at the bottom and fold it up over the folded sides. Roll the whole thing up and away forming a tight burrito. Repeat with remaining tortillas.
