Creamed Spinach with Goan Curry
In this twist on classic creamed spinach, our creamy Goan Coconut Curry Starter substitutes traditional dairy to create a spicy, citrus-infused vegan side dish worthy of any holiday table.

2 packages frozen chopped spinach (16-18 ounces)
1 small yellow onion, finely chopped
4 cloves of garlic, minced
1 cup Goan Curry Starter
1/2 cup water
Add thawed spinach on to a clean kitchen towel and squeeze out excess water.
In a 1-quart sauce pan add the onion and garlic with a tablespoon of olive oil.
Place this over a medium heat and cook for 3-4 minutes then add the spinach and Goan Curry Starter.
Stir to incorporate ad add the water.
Bring this to a simmer and stir.
