Chipotle Barbeque Spiced White Bean Garlic Dip
Manitou Chipotle Barbecue Seasoning adds tangy, smoky barbecue flavor to this creamy bean dip, perfect with tortilla chips or vegetable crudités.

1 cup Cannellini Beans
6 cups water for soaking
9 Fresh Garlic Cloves, peeled and roasted
2/3 cup onion, diced
1/4 cup Extra Virgin Olive Oil
3 Tbsp Chipotle BBQ Seasoning
2 Tbsp Fresh Lemon Juice
2 Tbsp Fresh Cilantro, washed, chopped
Salt and Pepper to taste
Sort through the great northern beans, rinse, and soak in the 6 cups water overnight.
Next day, add the beans to a stainless pot, cover with at least 2 inches of water. Bring to a boil, then lower heat to simmer. Add salt and continue cooking until they are very soft, about 1 ½ hours.
Drain, reserving a cup of the cooking liquid. Let cool to room temp.
In a medium skillet, sauté the onions until soft. Add the Chipotle Barbeque Seasoning, and simmer for one minute.
In a robot coupe, puree the cooked white beans, roasted garlic cloves, and onion spice mix until very smooth. Puree in the Olive oil, Lemon Juice, and season to taste. If too thick, puree in a bit of the bean cooking liquid a bit at a time. If needed, adjust seasoning with a bit more Chipotle Barbeque seasoning.
Cut the Tomato into quarters, remove seeds and inner flesh, and dice fine.
Bowl up the dip, garnish with diced tomato, fresh cilantro leaves, and a sprinkle of the Chipotle Barbeque Seasoning. Serve with tortilla chips.
